Carrot Pancakes With Cream Cheese Maple Syrup

 
  • Gluten Free Pancake Mix
  • 1 Cup Finely Shredded Carrots
  • 1 tsp Pumpkin Pie Spice
  • 1 tsp Vanilla
  • 3 tbsp Coconut Sugar
  • 1 tbsp Maple Syrup
  • 2 tbsp Cup Finely Chopped Toasted Pecans Plus Extra for Serving
  • 1/3 Cup Raisins
  • Oil for Cooking (Grapeseed, Butter, or Spray)
 
Cream Cheese Maple Syrup
  • 2 Tbsp Cream Cheese
  • 1/2 Cup Pure Maple Syrup
Heat a griddle or skillet on medium heat. Mix all ingredients for pancakes. Grease griddle. Spoon pancake mixture on to griddle and cook first side till bubbly. Flip and cook another minute. Keep warm in a 200 degree oven while you finish cooking the batch. Warm cream cheese (covered) in the microwave for 15-20 seconds. Stir in maple syrup, it will be lumpy. Microwave another 15 seconds. Whisk till smooth. Serve over pancakes and sprinkle with chopped pecans. Enjoy!
